Job Description
Saboteur is a new restaurant opening late summer 2026 in Los Angeles. Led by Chef Deb Keetch, Saboteur is inspired by the bistros of Europe translated through a distinctly Californian lens. We're building something with a strong point of view, and we're looking for a General Manager who wants to help bring that world to life.
This isn't a role for someone who just wants to run the floor. We're looking for someone who wants to invest in shaping what Saboteur becomes โ from the way a table feels on a Thursday night to the way we show up online. Someone with taste, curiosity, and a real stake in the details.
What You'll Be Doing Recruit and develop a team focused around our guiding principles โ establish the behaviors, habits, and culture that will define the Saboteur experience from day one. Central to that is fostering a genuine sense of community, both within the staff and with our guests, creating an environment where people feel connected to the place and to each other Oversee operational and administrative responsibilities such as scheduling, payroll, inventory, reservation management, and implementing and maintaining internal systems and checklists Help develop the style of service and implement and maintain service standards and protocols Create a culture of continued learning by providing employees with opportunities for continuing education, developing growth plans, providing feedback, and conducting employee reviews Oversee all daily front-of-house operations Understand and oversee P&L revenue and cost drivers Collaborate on a wine and cocktail program that fits the spirit of Saboteur Be a creative partner in developing the world of Saboteur โ including collaborations, special projects, and an events program Develop and oversee our social media presence; help define the voice and aesthetic of the restaurant in the world What We're Looking For 2 years of restaurant management experience Experience opening a restaurant โ or a strong desire to build from the ground up A solutions-oriented mindset โ someone who approaches challenges with composure and resourcefulness A creative sensibility with an eye for atmosphere, storytelling, and the full arc of the guest experience Strong leadership and team-building skills, with the ability to set a high standard while fostering a supportive and motivated culture Interest in the brand-building side of restaurants: events, collaborations, community, and social presence Genuine passion for wine and the broader world of food and beverage Someone who is energized by the process of building something โ not just operating it Qualifications Technical proficiency in restaurant POS and reservation systems Strong written and verbal communication skills ServSafe Manager certification required within 90 days of hire Available to work nights, weekends, holidays, and extended shifts as needed Exceptional food and beverage knowledge Why Saboteur We're creating a restaurant we're proud of โ a place with thoughtful food, an interesting bottle list, a distinct point of view, and a team that cares about getting it right. Compensation $80,000โ$95,000 DOE Benefits & Perks: Health insurance reimbursement, Paid Time Off, performance bonuses, dining discounts, cell phone stipend Physical Demands The physical demands for this position include seeing, hearing, speaking, reaching, frequently lifting up to 25 pounds, occasionally lifting up to 50 pounds, sitting or standing for 4 to 8 hours, bending, and moving intermittently during working hours.
