Director of Sales Compartí & Colonia Verde · Brooklyn, NY · Hybrid · Full-Time · Base + Commission This is more than a sales role, it's a chance to work directly with ownership in shaping what catering and hospitality mean for Compartí and Colonia Verde as the industry itself evolves. We're looking for someone with a true entrepreneurial spirit: someone who will operate less like an employee and more like a partner, whose ideas and instincts will materially shape where this business goes next. Day to day, you'll take ownership of Compartí's catering pipeline, step into Colonia Verde's existing sales relationships, build a brand-new private dining program from the ground up, and help lay the early sales groundwork for a future restaurant concept we're not ready to announce publicly yet.

About Compartí & Colonia Verde Compartí is a Brooklyn-based catering and events company, and Colonia Verde is our restaurant, together, a hospitality group built on food, hospitality, and relationships that last. We're growing: a new private dining room just opened upstairs at Colonia Verde, and another new concept is in active development (not yet public, we'll share more during the interview process).
This role sits at the center of that growth. About the Role A year from now, the person in this seat will be running a multi-venue sales operation: Compartí's catering pipeline humming, Colonia Verde's existing client relationships intact and growing under their care, the new Upstairs private dining room established as a real revenue line with a pipeline of its own, and the sales approach for our next restaurant concept built and ready to go from opening day. This is as much a builder's role as a manager's role, you'll inherit some of it and have to create the rest.
Beyond the day-to-day, this is a genuine opportunity to work alongside ownership on rethinking what catering looks like in this day and age, bringing fresh ideas, helping pivot the business toward where the industry is headed, and having a real hand in shaping its direction. We're looking for someone with an entrepreneurial mindset who wants to be a partner in that work, not just an employee executing someone else's playbook. Your contribution here won't be incremental, it will help define the shape of this business.
Your Portfolio: Compartí Catering Existing inbound catering pipeline — inquiries, proposals, bookings, CRM (Tripleseat), and handoff to production. Colonia Verde — Privaate Events Sales Takes over Colonia Verde's existing head-of-sales book and active pipeline; keeps current relationships moving and growing. Colonia Verde Upstairs (Private Dining, seats 10) A new private dining space that needs to be actively marketed and booked, this person owns a building and is essentially building its pipeline from scratch.
Future Restaurant Concept (in development) Will lead sales for this space as it comes online, an opportunity to shape the go-to-market approach for a brand-new property from day one. (Name not yet public, more details shared during the interview process.) What You'll Do Own and grow Compartí's inbound catering pipeline, inquiries, discovery, proposals, bookings, and CRM (Tripleseat) accuracy. Take over Colonia Verde's existing head-of-sales relationships and active pipeline, and keep that momentum going. Build the Colonia Verde Upstairs private dining room (seats 10) into a real, recurring revenue stream, from outreach and positioning through to a full booking calendar.
Lead sales planning and early pipeline-building for our next restaurant concept ahead of its launch, helping shape how we bring a brand-new space to market. Run discovery calls, build proposals, and close deals across all four areas, balancing inbound conversion with proactive outbound where new spaces need a push. Coordinate tastings and planning meetings, and partner closely with the production/operations teams for seamless handoffs.
Track activity, conversion, and pipeline health across every venue so nothing, and no space, gets neglected. What We're Looking ForRequired Real experience running a hospitality, catering, or restaurant sales pipeline end to end, from first contact to signed, executed event. Comfort owning revenue outcomes directly, this role's earnings are tied to performance, and the right person sees that as opportunity, not risk.
A genuine entrepreneurial spirit, someone who wants to help shape where this business goes next, and who sees themselves as a partner in that work rather than an employee executing a fixed playbook. Proven ability to both manage an existing book of business and build a new one from scratch, this role does both at once. Excellent written and verbal communication, with the organizational discipline to run multiple active pipelines without anything slipping.
Hands-on CRM experience (Tripleseat experience a strong plus). Preferred A network or strong familiarity within the Brooklyn/NYC hospitality, events, or private dining space. Experience helping launch a new venue, concept, or revenue line from the ground up.
Compensation This role pays a monthly base salary plus commission on Food & Beverage revenue — so your income has a reliable floor and real upside tied directly to what you bring in. The commission is 5% of Food & Beverage revenue across all the properties you manage. To give you a concrete sense: on a month where you close $50,000 in F&B sales, your commission is $2,500 — on top of your base.
On a $100,000 month, it's $5,000. The more you build, the more you earn. There's also a bonus for repeat and recurring clients you personally bring in, rewarding the long-term relationships that are the backbone of this business.
Where You'll Work This role is hybrid and based in Brooklyn, NY — on-site for tastings, planning meetings, client visits across both Compartí and Colonia Verde, and the spaces you're building out, with flexibility to work the rest of the time remotely.
